Baked Potato Casserole-- Serves 20

5 lbs. red potatoes with peeling left on baked or microwave & cut into 3/4 in. cubes
1 lb. bacon cooked and crumbled
2 cups cheddar cheese cubes
2 cups SHARP shredded cheddar cheese
1 large onion chopped fine
1 cup lite mayonnaise
1 cup lite sour cream
1 T. minced chives (optional) for color
1 tsp. salt
1/2 tsp. pepper
Combine potatoes and bacon in large mixing bowl.
Stir remaining ingredients together and fold into potatoes.
Pour into a greased 4 and 1/2 quart baking dish ( I used two 9 x 13 pans)
Bake uncovered at 325 degrees for 50 - 60 minutes or until lightly browned on top.
